Ingredients

Trimmed Beef Shanks

Big Poppa’s Jallelujah Jalapeño Lime Seasoning

Big Poppa’s Cash Cow Seasoning

Chef Merito Fajita Marinade

Tortillas (flour or corn)

Assorted toppings (such as diced onions, chopped cilantro, sliced avocado, shredded cheese, salsa, sour cream)

Directions

Preheat your smoker to 250°F (120°C).

Liberally season the beef shanks with Big Poppa’s Cash Cow and Jallelujah Jalapeño Lime Seasonings. Ensure the seasoning covers all sides of the meat evenly.

Allow the seasoned meat to rest for a few minutes, allowing the seasonings to meld into the meat.

Place the seasoned beef shanks onto the smoker and let them smoke for approximately 4 hours, or until the meat is tender and has reached your desired level of doneness.

Remove the smoked beef shanks from the smoker and place them meat side down in a foil pan. Pour half a bottle of Chef Merito Fajita Marinade over the shanks.

Cover the foil pan with foil and return it to the grill/smoker for another 1-2 hours, allowing the flavors to further develop and the meat to become even more tender.

While the meat is cooking, grill up your favorite vegetables and prepare any desired toppings to accompany your tacos. This could include grilling onions, peppers, and mushrooms, as well as chopping cilantro, slicing avocado, and shredding cheese.

Once the beef shanks are cooked to perfection, remove them from the grill/smoker and shred the meat using two forks.

Warm the tortillas and assemble your tacos by filling them with the shredded beef and your choice of grilled vegetables and toppings.
