An easy melt-in-your-mouth fillet recipe

Big Poppa’s melt-in-your-mouth fillet recipe will help you achieve steakhouse quality filet in your backyard.

Reverse searing is the ultimate way to cook a perfect steak. Using this method makes it easy to sear in juices and leaves your meat full of flavor and perfectly tender. There’s a reason so many BBQ pit masters are using this cooking method. It’s what the cool kids are doing. 

For the tastiest results, Big Poppa seasons his fillets with the award-winning combination of his Double Secret Steak Rub and Little Louie’s Seasoning. Together, these seasonings boost the natural flavor of the fillet and create an unbelievably delicious finish.

Ingredients

6 teaspoons Big Poppa Smokers Little Louie’s Garlic Seasoning w/ Black Pepper

7 teaspoons  Big Poppa Smokers Double Secret Steak Rub

1/2 stick butter (Pure Irish Butter recommended)

Directions

Preheat grill/smoker to 275F

Season fillet with 1 tsp of Big Poppa Smokers Little Louie’s Garlic Seasoning w/ Black Pepper and 1 tsp of Big Poppa Smokers Double Secret Steak Rub. Rub seasoning in and repeat on the other side – repeat with all fillets

Let fillets “sweat” or rest for 5 minutes before placing on grill/smoker

Place fillets on grill, cook in indirect heat at 275F

Cook each side for 12-15 minutes or until an internal temperature of 128F is reached

Remove fillets from smoker and let rest for 5 minutes before searing

Make Double Secret Butter: using a pot, melt butter, add 1 tablespoon of Big Poppa Smokers Double Secret Seasoning and whisk – set aside

Place fillets back in smoker and cook in the direct heat at 300-325F to sear, sear each side for 5 minutes

Baste fillets with Double Secret Butter 1 minute before taking them out

Remove fillets from grill and reapply Double Secret Butter

Let rest for 5 minutes before slicing/carving

Serve
