The amount of recipes you can create with pork loin are endless! One of Big Poppa’s favorite pork loin recipes is Pork Fajitas.
This simple pork recipe is almost effortless to make. The hardest part you’ll encounter is chopping up the ingredients. After you’re done cooking, grab some tortillas, sour cream, guacamole and enjoy.
Quick tip: If you attempt to flip your pork and the pork does not let go of the cooking grate right away, that means it’s not ready to turn.

1 Smithfield Prime Boneless Center Cut Pork Loin
3/4 cup Big Poppa Smokers Jallelujah Seasoned Jalapeno Salt
1 whole yellow pepper
1 whole red pepper
1 whole white onion
1/2 bottle Chef Merito Fajitas Marinade
3 tablespoons butter
Pre-heat grill/oven to 300F
Slice pork loin into half inch slices
Season pork loin with Big Poppa Smokers Jallelujah Jalapeno Seasoning (about 1 tablespoon per side)
Chop the peppers (red and yellow) and onion into thin strips (julienne cut)
Put peppers and onions in a foil bag
Sprinkle 3 tablespoons of Big Poppa Smokers Jallelujah Jalapeno Seasoning Salt onto the peppers and onion and add 3 tablespoons of butter
Pour 1/2 bottle of Chef Merito Fajitas Marinade into the foil bag
Seal foil bag and place in grill/oven for about 20 min at 300F
Take pork loin slices and place in smoker, leave until 90% cooked
Take pork loin slices off and cut into thin strips (julienne cut)
Add pork loin strips into foil bag, seal, and place back into the smoker for 8 min
Remove foil pack from grill/oven and plate
